Role Purpose:
The General Restaurant Manager will be responsible for the full daily operation, commercial performance, customer experience, people management, and brand standards of a restaurant in Ghana.
The successful candidate must have proven restaurant management experience and a strong understanding of the brand’s service culture, food quality expectations, operational systems, and guest experience standards.
Key Responsibilities
Restaurant Operations
- Manage the full day to day operation of the restaurant
- Ensure the restaurant operates according to restaurant brand standards
- Deliver excellent guest service across breakfast, lunch, dinner, coffee, bakery, and takeaway occasions
- Ensure all departments are ready for trade before opening
- Monitor service speed, table turnaround, guest complaints, product availability, and restaurant cleanliness
- Ensure all operating procedures, checklists, and controls are followed daily
- Maintain strong floor presence during peak trading periods
- Ensure the restaurant is properly staffed and managers are correctly deployed during trading hours
Financial Performance
- Drive sales growth through strong guest service, local store marketing, and operational excellence
- Manage food cost, labour cost, wastage, discounts, refunds, and controllable expenses
- Review daily sales, cash, voids, discounts, and product mix
- Ensure all cash handling, banking, and reconciliation procedures are followed
- Manage stock levels and ensure stock losses are controlled
- Support budgeting, forecasting, and weekly performance reviews
People Management
- Recruit, train, coach, and develop restaurant team members
- Build a positive and disciplined restaurant culture
- Manage staff schedules, attendance, overtime, grooming, and performance
- Conduct daily team briefings and shift handovers
- Ensure all staff understand restaurant service expectations and product standards
- Manage poor performance, misconduct, and disciplinary matters professionally
- Develop assistant managers, supervisors, waitrons, baristas, and kitchen team leaders
Guest Experience
- Ensure every guest receives friendly, warm, and efficient service
- Handle guest complaints quickly and professionally
- Maintain high standards of table service, product presentation, coffee quality, and restaurant ambience
- Monitor online reviews, guest feedback, and repeat customer behaviour
- Ensure waitrons understand menu knowledge, upselling, and guest engagement
Food Safety, Hygiene, and Compliance
- Ensure full compliance with food safety, hygiene, health, and safety standards
- Ensure daily cleaning schedules and pest control standards are followed
- Ensure all temperature controls, food storage procedures, and expiry checks are completed
- Maintain a clean, safe, and audit ready restaurant at all times
- Ensure compliance with Ghanaian labour, health, safety, and company policies
Brand Standards
- Protect the restaurant brand by ensuring consistent execution of all standards
- Ensure correct use of recipes, menu items, portioning, crockery, uniforms, signage, and guest service procedures
- Prepare the restaurant for internal and external brand audits
- Immediately correct any brand standard noncompliance

Minimum Requirements
- Proven experience as a General Restaurant Manager, Assistant General Manager, or senior manager within restaurant
- Strong knowledge of restaurant operations, service standards, menu execution, and brand culture
- Experience managing a full-service casual dining restaurant
- Strong financial understanding, including sales, food cost, labour cost, wastage, and stock control
- Strong leadership and people management skills
- Excellent guest service mindset
- Ability to work under pressure and manage high volume trading periods
- Strong communication skills in English
- Willingness to relocate to Ghana or work in Ghana
- Must not currently be employed by an active restaurant franchisee
- Must not be recruited in a way that breaches any franchise, employment, or non-solicitation obligations
Preferred Experience
- Restaurant opening experience is a requirement
- Experience training new teams
- Experience in African or South Africa restaurant business
- Experience with coffee shop, bakery, and full-service dining operations
- Experience managing both front of house and back of house teams
